Sushi de kobe beef maçaricado com flor de sal e limão
Apesar de novo – tem menos de um ano- o Aya, um dos melhores japoneses da cidade e comandado pelo chef Juraci Pereira, já renovou o cardápio.
Croque maguro (atum sobre uma massa fina, broto de nabo, flor de sal e azeite de trufas brancas); merluza negra com legumes; sushi de vieira e de atum com foie gras; costelinha de porco cozida ao molho de shoyu e nabo, servida com purê de inhame
Provei algumas coisas realmente muito boas, como o novo sushi de kobe beef maçaricado com flor de sal e limão – carne tenra, infernalmente macia e saborosa, sobre arroz perfeito (R$ 18,50 a unidade)-, o croque maguro- atum sobre uma finíssima e crocante, broto de nabo, flor de sal e azeite de trufas brancas (R$ 28)- e o tamago furai – ovo cozido, com gema molinha, à milanesa, ovas de salmão, flor de sal e purê de trufas brancas (R$ 28).

Acertadíssimo também o sashimi de salmão maçaricado com flor de sal e azeite trufado (R$38) e potente a costelinha de porco cozida ao molho de shoyo e nabo, servida com purê de inhame (R$ 48). Mesmo não sendonovidade, jamais deixe de pedir o incrível sushi de vieiras (R$ 17 a unidade) e o de atum com foie gras (R$ 18 a unidade).
Só não gostei do magret tataki- finas fatias de de peito de pato com abundância de molho picante doce demais, que mascarava até o sabor intenso da carne da ave (R$ 29,50).
Suflê de chocolate com sorvete de chá verde
Para terminar, o gostoso suflê de chocolate servido com sorvete caseiro de chá verde (R$ 22)
